A passion evolving over three generations

By surrounding himself with experienced bakers and pastry chefs with diverse areas of expertise, Pascal Le Boulanger has refined his craft and strengthened his team with international talent. Over the years, the company has built a strong reputation for its excellence in international and Québec gastronomy.

1967

Inspired by his baker brother, Roger Chazal opens his first artisanal bakery in Montalieu-Vercieu, near Lyon, France.

1987

His son, Pascal, and his partner, Claire, take over the business and open four French-style boutiques, carrying on the art and passion of the family bakery.

2000

During a memorable visit to Quebec, Pascal and Claire are captivated by the enchanting setting of the province.

2012

The first Pascal Le Boulanger bakery opens in Stoneham, in Québec City!

2017

The Stoneham bakery moves to a larger space to meet growing demand.

2022

Guillaume, the son of Pascal and Claire, opens a new boutique in Saint-Sauveur, representing the third generation of artisan bakers.

2025

Guillaume wins the Canada’s Best Croissant award at the 2025 Bakery Cup of Canada. It’s the very same recipe you can enjoy in our bakeries!
